How to Taste Champagne
Even if you're not a wine connoisseur, learning to appreciate champagne enhances your Épernay experience:
Observe: Hold your glass by the stem (never the bowl) and notice the color – ranging from pale gold to rich amber – and the bubbles' size and persistence.
Smell: Swirl gently and take short sniffs to identify aromas like citrus, flowers, brioche, or honey.
Sip: Take a small sip and let it roll across your tongue. Notice the initial attack (first impression), the mid-palate, and the finish.
Consider: Evaluate the balance between acidity, sweetness, and body. How long do the flavors linger?
Pair: Champagne isn't just for celebrations – it pairs wonderfully with many foods, from seafood to fried dishes and even certain cheeses.
Remember the local wisdom: "You don't drink champagne, you taste it." Take your time and savor each glass.
The tours are fantastic for teaching special techniques for sipping (drinking) Champagne. We highly recommend taking at least one tour while you are in the Epernay to learn about the full Champagne tasting experience.
History of Champagne in the Region
The Champagne region’s history dates back to the Roman era, but it was in the 17th century that the process of making sparkling wine was refined. Dom Pérignon, a Benedictine monk, is often credited with perfecting the technique, leading to the world-famous sparkling wine we celebrate today. The unique chalky soil makes this region perfect for growing grapes and has been a major influence throughout Épernay’s existence.
The 19th century saw champagne houses flourish in Épernay, with entrepreneurs like Claude Moët, Pierre-Nicolas Perrier, and Eugène Mercier establishing dynasties that continue today. These visionaries built magnificent headquarters along what would become the Avenue de Champagne, combining production facilities with stunning showcases for their brands. Épernay has been at the heart of this effervescence, with historic houses like Moët & Chandon and Mercier paving the way.

Spring/Summer: Light, breathable fabrics with a lightweight jacket or sweater for cooler evenings. Comfortable walking shoes are essential for strolling the Avenue de Champagne and touring cellars.
Fall/Winter: Layers are key, with a warm coat and scarf. The champagne cellars maintain a constant cool temperature (around 10-12°C/50-54°F) year-round, so bring a light jacket even in summer.
Cellar Tours: Many underground cellars have uneven, sometimes slippery floors, so opt for flat, closed-toe shoes with good grip.
Dining: While most restaurants don't enforce strict dress codes, smart-casual attire is appropriate for dinner at finer establishments.
Remember that French style tends to be understated yet polished – think quality over quantity when packing.
